During the summer months, I love to eat seafood. Clams, mussels, lobster, crab … whatever I can get my hands on. Seeing steamed clams reminds me of my childhood. I have memories of get togethers with HUGE pots full of steamed clams, mussels and eel. Everyone used to eat off paper plates and plastic forks, it was the ultimate of a summer-beach feast. Here is my rendition on steamed clams.
Easy Steamed Clams Recipe
Ingredients
- 2 lbs clams washed thoroughly
- 6 pepperochini peppers
- 1 cup chicken broth
- 1 tsp chopped garlic
- 1 tsp parsley flakes
Instructions
- In a large pot, bring the chicken broth and garlic, peppers and herbs to a boil.
- Add clams, and cover.
- Cook for approximately 5-7 minutes or until the clams open.
- Discard any clams that did not open.
- Pour into bowl and discard any clams that did not open.
- Serve with crusty bread.
