Eggnog Cake Muffin Recipe

This eggnog cake recipe is delicious and works great in muffin form so if you have leftover eggnog in your refrigerator these holiday muffins are what you need to bake today. I love to combine eggnog into many desserts. There is something about that spice that really levels up your dessert recipes.   

 

Eggnog Muffins

Eggnog crumb coffee cake muffin recipe

 

Ingredients

Eggnog streusel crumb topping

1 cup flour

¾ cup brown sugar

2 tsp cinnamon

¼ tsp nutmeg

¼ tsp salt

1 stick unsalted butter, melted

2 TBSP eggnog

 

Eggnog cake

 

¾ cup sugar

1 stick unsalted butter

¾ cup sour cream

½ cup eggnog

2 eggs

2 tsp vanilla extract

1-1/2 cup flour

2 tsp baking powder

1 tsp salt

 

eggnog cream cheese glaze

¾ cup powdered sugar

5 Tbsp eggnog

4 oz cream cheese, room temperature

Directions

Preheat oven to 350.

Place muffin liners into cupcake pans and set aside.

Prepare the streusel – combine all the ingredients until crumbly- set aside.

To make the cake- Cream the butter and sugar together until light and fluffy (4 minutes)

Add the sour cream and eggnog until combined. (it may look weird at this point!)

Add the eggs and vanilla extract and mix until smooth.

Add the dry ingredients and combine.

Spoon the mixture into the prepared muffin tins about ¾ full.

Top with streusel topping

Bake for about 20 minutes or until done.

Cool completely.

Combine the glaze ingredients and drizzle on the top of each muffin.

This eggnog dessert is a delicious take on the traditional holiday drink. We love ours warmed up just a little in the microwave before serving. Baking with eggnog is a wonderful, flavorful way to add a nice spicy and creamy addition to any recipe.

 

There are so many delicious eggnog crumb coffee cake recipes that are out there but I think that this recipe made into muffins is the right size proportion for a delicious treat at anytime during the year. I use a muffin tin to make these muffins fantastic each and every time!

 

Hint- Buy a few extra cartons of eggnog and freeze them for anytime during the year.
