Sand Dollar Shortbread

These sand dollar cookies are perfect for a beach themed party or even holiday cookie platters! They are a versatile shortbread cookie with cinnamon accent. These cookies would be a great addition to a mermaid party dessert table!

Ingredients for Sand Dollar Cookies

You can easily omit the almond pattern or create a new design based on the theme of your party. If you put down 3 sliced almonds the cookies would resemble coconuts or simply press one sliced almond in the middle.

 

These sand dollar cookies really look like sand dollars! Perfect for kids and adults alike!

Sand Dollar Cookies

Ingredients

 

2 sticks unsalted butter, room temperature

½ cup confectioner’s sugar

1 tsp almond extract

2 cups flour

1 tsp salt

1 TBSP cinnamon

½ cup sliced almonds for decoration

 

Directions

In an electric mixer with the paddle attachment cream the butter and sugar until light and fluffy. Add the almond extract and combine.

Add the salt, cinnamon and flour and combine.

Wrap the dough is plastic wrap and refrigerator for an hour.

Preheat the oven to 325 and place silicone mats in your baking pans.

Roll the dough out on a floured surface and using a circle cookie cutter, cut out your shapes.

Press the almonds into the tops of each cookie in a sand dollar design.

Bake for 13- 15 minutes. Cool completely.

These cookies can be frozen after they are cooled for cookies anytime!

We love baking cookies and these sand dollar cookies are very easy to make, roll and bake. They have a snickerdoodle taste but with a dense cookie. These cookies would hold up in shipping or to be used as a favor for a party.
