Coconut Milk Rice Pudding
I love making rice pudding but there is usually a slot of sugar and lets face it swimsuit season is around the corner. I love having dessert but would prefer one that does not have an abundance of sugar in the ingredients. This recipe calls for no extra sugar, just what is in the fat free sweetened condensed milk.
Coconut Milk Rice Pudding Recipe
Ingredients
1 can coconut milk
1 can fat free sweetened condensed milk
1 cup rice
1 TBSP vanilla extract
1 TBSP cinnamon
Instructions
Place coconut milk in a medium saucepan and bring to a boil.
Add the rice and lower heat to simmer for 30 minutes.
Remove from heat and stir in the condensed milk, cinnamon and vanilla until well combined.
Let sit for 5 minutes and stir again.
So simple as so good! You can add toasted coconut as a garnish or make a homemade whipped cream to top this rice pudding. To be honest most rice pudding recipes I enjoy cold but this coconut milk rice pudding tastes amazing warm. It is like a little bit of comfort in a pretty bowl.
