Stacked Wedding Cake Cookies
No Fail Sugar Cookie Recipe – small batch
This dough does not need to be refrigerated first prior to rolling out your dough. I used 3 circle cookie cutters in step-up sizes and rolled my dough to ¼” thick.
Ingredients
¼ cup unsalted butter, room temperature
1/3 cup sugar
1 egg yolk
1 TBSP cream
1 TBSP sour cream
2 teaspoon vanilla extract
¼ tsp salt
¼ tsp baking powder
1 cup flour
Instructions
Preheat oven to 350 degrees.
Line to baking sheets with silicon mats and set aside.
In a large mixing bowl of an electric mixer, fitted with the paddle attachment, cream the butter and sugar together.
Add the egg yolk and vanilla and mix until incorporated.
Add the remaining ingredients to the creamed mixture until the dough forms.
Roll the dough out on silicon mat to ¼ inch thick. Use the cookie cutter to cut out your shapes. Remember each cake will be made of 3 cookies, so plan accordingly.
Bake for 10 minutes, then rotate cookie sheets ½ turn and bake for additional 4 minutes.
Cool completely before icing.
**When icing your cookies, use your favorite royal icing recipe or even a pre-made version. Be sure to make an outline around the edge and then fill in the centers. Decorate with sprinkles and other edible items.
