Making biscotti does not have to be a hard recipe. Simply use a boxed cake mix to take out a few steps. The best part about this recipe for biscotti from cake mix is that you only need a few ingredients and you can definitely alter the recipe depending on what you have on hand in the pantry.
Make Biscotti with a Cake Mix
We made a coconut biscotti with shredded coconut and chocolate chips. So, for our recipe we used a box coconut cake mix and shredded coconut as a mix-in. But you can substitute a vanilla or chocolate cake mix as well as any type of extracts as well. Certain extracts are a bit more potent so be careful if you are using lemon, mint, and orange.
Biscotti from Cake Mix
Ingredients
1 box cake mix
1 cup flour
½ cup butter melted
1 TBSP vanilla extract
3 Eggs
1 cup of mix-ins (if desired)
Directions
Preheat oven to 375. Line baking sheet with silicon mat.
In a bowl of a stand mixer combine the cake mix, flour, butter, eggs and extract until combined – about 2 minutes.
Add the mix-ins and mix for another minute.
Divide the dough in half and form into 2 logs each about 12”x2”.
Bake for 30 minutes. Let cool on pan for 15 minutes.
Lower the oven temperature to 325.
Using a serrated knife cut each log into ½ inch size slices. Arrange the slices on one edge and bake for an additional 10 minutes.
Flip the cookies to the other side and bake again for another 10 minutes.
Cool completely.
There is nothing better than biscotti with a cup of coffee in the late afternoon. I even enjoy to have the biscotti for breakfast. You can easily alter the recipe depending on what type of biscotti you like.
