Depression Cake (no eggs, no butter)

This unique cake made popular during The Great Depression is rich and dense and is delicious with and without icing. We love this cake that has no eggs and no butter with just a sprinkle of powdered sugar.

Wacky Cake

We made this cake using only pantry staples. This is a great dessert to make when your supplies are low but you are craving something sweet. This moist, wacky cake can be mixed and baked in the same 8×8 baking pan too!

Depression Cake (no eggs, no butter)

 

Ingredients

 

1-1/2 cups flour

1 cup sugar

1 tsp baking soda

½ tsp salt

1 tsp white vinegar

5 TBSP vegetable oil

1 cup water

2 tsp vanilla extract

Directions

 

Preheat oven to 350. Grease an 8”x8” baking dish.

In the baking dish, mix the flour, sugar, baking soda and salt.

Add the vinegar and vanilla and oil to the dry ingredients.

Pour the water over the entire thing and mix to combine until smooth.

Bake for 30-35 minutes.

Let cool.

 

This cake is so easy to make and honestly uses ingredients that can be found in your pantry. I like to use a really good vanilla extract in this recipe because you can really taste the vanilla flavor in this magic cake.

This is a fun recipe to make with your family. My kids loved to measure and add the ingredients and of course eat the cake when finished! This would also make a great breakfast cake as well.
