Gingerbread Cake with Cream Cheese Frosting
With the holidays fast approaching I love to get into the spirit as often as I can. One of my favorite desserts during this time of year is gingerbread and this gingerbread loaf with cream cheese frosting is perfection!
It tastes just like the gingerbread loaf from Starbuck’s!
Gingerbread Loaf with Cream Cheese Frosting
Makes: 8 slices
Cook: 55 Minutes
Ingredients:
For the loaf-
1 stick unsalted butter, room temperature
1 cup sugar
1 tsp vanilla extract
1 egg, room temperature
1 cup applesauce
1-1/2 cups flour
1 tsp baking soda
2 tsp ground ginger
2 tsp cinnamon
½ tsp nutmeg
For the frosting
4 oz cream cheese, room temperature
2 tsp vanilla extract
1-1/2 – 2 cups powdered sugar
Candied ginger, for topping {optional}
Instructions:
Preheat oven to 350. Spray a 9×5 loaf pan with non-stick spray and set aside.
With the paddle attachment on an electric mixer, cream together the butter and sugar until light and fluffy (about 3 minutes).
Add the vanilla and egg, then the applesauce. Mix to combine.
Add in the dry ingredients until fully mixed together.
Pour into prepared pan.
Bake about 55-60 minutes or until a toothpick poked into the center comes out clean.
Cool completely before frosting.
For the frosting-
Beat the cream cheese with vanilla until smooth. Add in the powdered sugar until thick and creamy.
Spread a thick layer over the gingerbread loaf and top with candied ginger.

This is definitely one of my favorite recipes and it is so flavorful. We do not live close to a Starbucks’s so it is wonderful that we can get our baked goods at home.
