Now that we are entering the fall months, I seem to prepare more meals for my family. My husband loves chicken marsala dishes and I love to be able to prepare this for him at home as this is his go-to when we are ordering meals in restaurants. I created this gluten free chicken marsala and not only does it taste good but it smells amazing.
We have been trying to eat a little better and instead of breading and frying the chicken cutlets, I am creating this chicken dish with an easy pan-fry. We serve our chicken marsala over Barilla Gluten Free Penne. Barilla Gluten Free has the same taste and texture similar to “regular” pasta. Trust me, my daughter is a pasta aficionado and she loves it!

Chicken Marsala over Barilla Gluten Free Penne
Ingredients
2 pounds chicken cutlets, thin-sliced
4 pieces of pancetta, chopped
2 cups gluten-free chicken broth
1 pound sliced mushrooms
1 pound Barilla Gluten Free Penne, cooked according to package directions
salt and pepper to taste
Directions
In a large sauté pan over medium heat, sauté the pancetta until browned.
Remove from pan and drain on paper towel.
Add the chicken cutlets to the same pan and cook on each side for about 3-4 minutes or until chicken is cooked through.
Remove the chicken from the pan and set aside.
Add the chicken broth to the hot pan. Scraping up the brown bit leftover from the pancetta and chicken.
Add the mushrooms and cook for about 5-8 minutes until mushrooms are cooked.
Place the pasta in a dish and top with chicken. Add the sauce and mushrooms.
Serve immediately.
A delicious and easy recipe to make on a weeknight. If you can not find pancetta you can use bacon as well. We love serving Barilla Gluten Free in our home as it is made with non-GMO corn and rice.
