Inspired by Dolly Parton’s Coconut Cake

If there is one thing for certain, it is my love for Dolly Parton! She recently launched a new product line of cake mixes and frostings that are unbelievable but I still like to make some recipes inspired by her favorite desserts.

Her walnut pie and fruit cocktail cake are just a few of my favorite desserts inspired by Dolly. This coconut cake is perfect- moist, light and full of flavor!

Dolly Parton Coconut Cake with Cream Cheese Frosting

Ingredients for Dolly Parton’s Coconut Cake

Cake –                                                                   Frosting – 

2 ½ cups flour                                                  1 cup unsalted butter, soft 

¼ teaspoon baking soda                                8 oz cream cheese, soft 

1 ½ teaspoons baking powder                       4 cups powdered sugar 

½ teaspoon salt                                              1 teaspoon coconut extract

10 tablespoons unsalted butter, soft           1 cup coconut

1 ½ cups sugar                                             

6 egg whites 

2 teaspoons vanilla 

2 teaspoons coconut extract 

1 cup coconut milk 

½ cup sour cream 

Preparation Instructions for Dolly Parton’s Coconut Cake

Cake – 

Preheat oven to 350 degrees and prepare 2 8×8 round pans with baking spray 

In a bowl whisk together flour, baking soda & powder, and salt – set aside 

In a mixing bowl beat the butter and sugar together until fluffy 

Add in the egg whites, vanilla, coconut extract, coconut milk, and sour cream

Mix in dry ingredients until combined 

Pour evenly into the pans and bake 28-32 minutes until a toothpick in the center comes out clean then cool completely 

Frosting – 

In a mixing bowl beat the butter, cream cheese, and coconut extract together until smooth 

Mix in the powdered sugar one cup at a time until smooth and creamy 

Place ½ cup of the frosting into a piping bag with a large star tip 

Frost the cake with the remaining frosting 

Coat the sides of the cake with coconut 

Pipe a few swirls on top of the cake then sprinkle on additional coconut 

Slice, serve, and enjoy!
