This is the cutest cake ever! I love this Peek A Boo Vanilla Almond Pound Cake recipe. It is totally worth the extra effort. I’m not going to fib this takes a bit of work and patience but it is so cute and the slices make you smile when you see them.peek a boo cake surprise inside

This Peek A Boo cake or Surprise Inside Cake has a heart in it. That is because I used a heart cookie cutter and red food coloring to make it pink. How adorable would this be for a little girl princess or tea party? The guests would absolutely swoon. This can easily be switch to a pumpkin/apple inside during the fall or a flower for the summer.

Peek A Boo Cake Recipe

Ingredients

  • Cake 1
  • Ingredients
  • 1 cup butter room temperature
  • 2-1/2 cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 2 tsp almond extract
  • ½ cup heavy cream
  • 2 tsp baking powder
  • 2-1/2 cups flour
  • ½ tsp salt
  • 2 drops red food coloring
  • Cake 2
  • ¾ butter room temperature
  • ¾ cup milk
  • 2 eggs
  • 1 cup sugar
  • 1 -3/4 cup flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp vanilla
  • Icing
  • 1 cup Confectioners Sugar combined with 3 Tbsp Milk

Instructions

  • CAKE 1
  • Preheat oven 325.
  • Cream butter and sugar, approx. 5 minutes.
  • Add eggs one at a time to combine.
  • Add extracts and heavy cream and mix.
  • Add salt, flour and baking powder and mix until just combined.
  • Add food coloring and blend – mixture should be pink.
  • Spray a 9x4 loaf pan and pour in batter.
  • Bake for 60-70 minutes
  • Cool completely then cut into 1 inch slices.
  • Using a heart cookie cutter, cut hearts out of each slice and put aside.
  • Prepare 2nd cake batter.
  • CAKE 2
  • Preheat oven 325.
  • Cream butter and sugar, approx. 5 minutes.
  • Add eggs one at a time to combine.
  • Add extract and milk and mix.
  • Add salt, flour and baking powder and mix until just combined.
  • Spray a 9x4 loaf pan
  • Stack the pink hearts in a row down the center of the loaf pan. Pour the batter of cake 2 into the loaf pan (it should cover the heart stacks.)
  • Bake for 60-70 minutes (check to make sure cake is done with toothpick)
  • Cool completely
  • Drizzle with icing.
  • Cool completely
  • Cut into 1 inch slices.
