PJ Masks Cat Boy Cupcakes

Ingredients

Cake box mix, prepared as cupcakes (make one dozen and use blue cupcake liners)

4 oz blue fondant, divided

2 oz white fondant

Cornstarch for rolling

2 sticks butter, softened

4 cups confectioners’ sugar

1 tbsp cocoa powder

2-3 tbsp milk

Blue gel food coloring

Yields: 12 decorated cupcakes

Directions

Allow your cupcakes to cool completely before decorating. Line a baking sheet with wax paper.

Dust a clean surface and your rolling pin with cornstarch. Roll out 3 oz of the blue fondant until it’s about ¼ of an inch thick. Cut out small triangles by using a pizza cutter. To achieve this, cut out strips, about ½ an inch in width. Then, cut them smaller, into rectangles. Then trim them into triangles by cutting off the corner of each rectangular fondant. Place 24 triangles on your lined baking sheet.

Knead the remaining 1 oz blue fondant with the 2 oz of white fondant. Once the colors are combined (pale blue), dust your working surface + rolling pin with cornstarch. Roll it out until it’s ¼ of an inch thick and cut out smaller triangles (with the same technique as your darker blue fondant triangles).

Brush each pale blue triangle with a bit of water and place on your larger triangles. The water will help the two fondant pieces stick together.

Using an electric mixer, start beating butter, sugar, cocoa powder and milk on medium speed. As the buttercream starts to form, increase to high. Add the gel food coloring until you achieve the shade of blue you desire.

Using a piping bag, frost each cupcake. Then place two fondant ears on every cupcake.
