A friend of mine gave me some rhubarb from her garden this past week. I have never tried rhubarb before and was looking forward to creating a recipe with it. I decided to make a Rhubarb Bread. my husband and I like tasty treats with our morning coffee.
2 cups diced rhubarb
1-1/2 c light brown sugar, packed
2/3 c oil
1 c milk
1 tsp vanilla
1 tsp baking soda
2 tsp vanilla
2-1/2 c flour
1 Tbsp softened butter
1/4 c sugar
1- Preheat oven to 350 and grease 2 loaf pans.
2- Combine brown sugar and oil and which until smooth.
3- Add the egg, milk, salt, baking soda, and vanilla.
4- Add the flour and blend until moist.
5- Fold in the rhubarb.
6- Pour batter into prepared loaf pans.
7- Combine the butter and sugar until crumbly, sprinkle on the batter.
8- Bake for 50-55 minutes.
9- Let cool.
