Vampirina Birthday Cakes
We love chocolate cake in our home and this recipe for chocolate cupcakes can also be made as a cake, just alter the baking time. This is a thin batter but trust me it comes out perfect and moist every time.
Simple tip for Swirled Icing
When I want a color swirl on my icing I simply put a few drops of the food coloring along the inside of the nozzle of the pastry bag and tip. For these cupcakes, it was purple and then fill the bag with icing (I used store bought cream cheese) . When you squeeze out the frosting to put on the cupcakes it will have a beautiful swirl of color. Easy!
Vampirina Cupcakes
Ingredients – for cupcakes
2 cups sugar
2 cups flour
¾ unsweetened cocoa powder
2 tsp baking soda
2 tsp baking powder
2 eggs
1 cup milk
½ cup canola oil
1 TBSP vanilla extract
1cup boiling water
Directions
Preheat oven to 350. Spray pans with a non stick cooking spray or use liners. I used a Pampered Chef brownie pan. Set aside.
In a mixing bowl of an electric mixer fitted with paddle attachment add all of the dry ingredients.
Add the eggs, milk, vanilla and oil and mix at medium speed for about 5 minutes.
Slowly add in the boiling water. **The batter will be thin and the water may cause the batter to bubble up a little bit. So be sure to add a little at a time and mix on low until all the water is incorporated.
Pour batter into prepared pans.
Bake for 20-25 minutes until a toothpick comes out clean. **Oven times may vary.

We used a variety of sprinkles, bat sprinkles and edible glitter.
