Thumbprint Cookie Recipe with Icing Filling
We love cookies and these Iced Thumbprint Cookies are perfect for the holidays or anytime of the year! Simply swap out the colors of the sprinkles and the icing for the middle fo a delicious and pretty cookie treat!
Ingredients for Thumbprint Cookies with Icing
- butter
- sugar
- vanilla extract
- flour
- salt
- sprinkles
- egg
Ingredients for the Icing
- milk
- confectioner’s sugar
- food coloring
These are a super sweet and chewy cookie that your whole family will enjoy. I love baking up different batches with themes for the holidays, fall, birthday parties and more. These would make the perfect addition to your holiday cookie trays too!
Thumbprint Cookies with Icing
Ingredients
for the cookies-
1 cup butter, room temperature
1/4 cup sugar
2 tsp vanilla extract
2 cups flour
1/2 tsp salt
1 egg
sprinkles
For the icing-
2 TBSP milk
1-1/2 cup confectioners sugar
food coloring
Directions
- Mix all the dough ingredients together, except the sprinkles. You can use an electric mixer or handheld mixer or just a spoon!
- Wrap the dough in plastic and chill for an hour in the fridge.
- Preheat oven to 325, place silicon mats on to cookie sheets and set aside.
- Roll the dough into 1 TBSP balls and press them into the sprinkles and place onto prepared cookie sheets.
- Using your thumb or back of a measuring spoon, make an indent in each cookie, be careful that the imprint is complete so the icing won’t leak out!
- Bake for 10 minutes and let cool completely.
- Make the icing and color to your choosing, pipe into the center of each cookie. Let set overnight.
