Danish Butter Cookies Recipe

The cookies in the blue tin. Danish Butter Cookies. You know the ones- the same cookie most of your grandparents had when you were growing up in their kitchens. The very same butter cookies in their adorable cookie liners and delicious melt in your mouth butter taste. This recipe is a very close example of a recipe that tastes very familiar. Just minus the blue tin.

Danish Butter Cookies

INGREDIENTS

1-1/2 sticks unsalted butter, room temperature

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 cups flour

1/2 teaspoon salt

1 egg white

1/4 cup sanding sugar

Directions

In the bowl of a stand mixer with the paddle attachment, cream the butter and sugar together until light and fluffy.

Add the vanilla, flour and salt and combine.

Divide the dough into 3 equal pieces.

Roll each piece into a log and wrap individually in saran wrap.

Refrigerate for at least 1 hour.

Preheat oven to 325.

Cut into 1/4 slices. and place on baking sheets with silicon mats.

Brush the tops of each cookie with the egg white and sprinkle with sanding sugar.

Bake for about 12 minutes.

Cool completely.

These cookies remind me of tea parties. I think this cookie would be a great addition to a little girls birthday party or a bridal or baby shower. You can very easily switch up the flavor by changing the extract- use almond, orange or lemon for a variation.
