It is time for holiday baking and by that, I mean Christmas Cookie baking has begun! These gingerbread blondies are the ultimate in classic Christmas flavors and are so easy to make.
A New Christmas Cookie – Gingerbread Blondies
The key to this recipe is the combination of fresh and ground ginger. It gives these blondies a really delicious treat with just the right amount of spice.
Gingerbread Blondies
Ingredients
¾ cup unsalted butter, room temp
2 cups light brown sugar
2 eggs
1 TBSP vanilla extract
3 tsp freshly grated ginger
1 TBSP ground ginger
1 TBSP cinnamon
½ tsp baking soda
1 tsp salt
2-1/4 cups flour
Directions
1- Preheat oven to 350°. Grease a 8×8 baking pan and set aside.
2- In the bowl of an electric mixer with the paddle attachment cream butter and sugar until light and fluffy.
3- Add gingers, baking soda, cinnamon, salt, then mix at low speed to blend.
4- Add eggs one at a time & vanilla extract and mix until combined.
5- Add flour and mix on low speed until blended.
6- Pour into prepared pan and bake for 40 minutes.
7- Cool completely.

This year I am planning on using reusable wooden boxes as the base to my Christmas cookie platters that we give and take to all of our holiday happenings.
When the cookies are done the hostess can reuse the wooden box for trinkets, mail, a catch-all by the front door!
