How to Make Angel Food Cake

Ingredients

1-1/4 cups sifted cake flour

¼ tsp salt

1-1/2 cups sugar (divided)

1-1/2 cups egg whites (about 12 eggs)

1-1/4 tsp cream of tarter

1 tsp almond extract

Directions

Preheat the oven to 325.

Beat the egg whites in a large bowl until light and bubbly. Add in the Cream of Tartar and continue to beat the egg whites until peaks begin to form. Slowly add in 1 cup of sugar, scraping down the sides often until the egg whites hold their peaks. Add in the almond extract.

In a separate bowl, combine the flour, salt and ½ cup of sugar.

Slowly fold in the dry ingredients into the egg white mixture.

Pour the batter into the 10-inch tube pan (Angel Food Cake Pan) and then run a knife through the batter going around the tube to make sure there are no air pockets.

Bake for 40-45 minutes.

Remove the pan from the oven and invert over a wine bottle for at least 1 hour, or until completely cooled.

**To remove from pan – run a knife around the sides of the cake to loosen from the pan. Place on a cake plate.
