I am always looking for a great dessert for Easter or really any Spring holiday. These adorable banana coconut truffles are the perfect addition to your Easter dessert table or your Spring holidays.
Truffles are so easy to make and you can choose any variety that your family loves and whip them together with what you have on hand in the fridge or pantry.
Easter Truffles
The combination of banana and coconut is one that I love from our Caribbean vacations. Think of a pina colada but with a banana twist. Sometimes we would order a dirty banana cocktail which is like a mudslide but with banana liquor. If you haven’t tried it, be sure to the next time you are on holiday.
Banana Coconut Truffles
Ingredients:
3 bananas
1 ½ cups desiccated coconut
4 – 1 oz blocks of white chocolate + 1 additional oz for each colored chocolate you will be using for decorating
Oil based food coloring, any desired colors
Sprinkles
Preparation Instructions:
In a bowl mash bananas with a potato masher or fork
Stir in coconut
Roll into balls and place on wax paper lined plate
Chill in fridge or freezer for at least one hour
Melt 4 oz of white chocolate
Dip balls into chocolate and return to wax paper lined plate
Melt 1 oz of white chocolate per food color using
Stir in food coloring until desired color is reached
Pour into piping bag or food storage bag
Cut off the tip and drizzle over truffles
Immediately put sprinkles on before chocolate sets
Serve & enjoy!
