I use refrigerated sugar cookie dough- this really could not be any simpler for you to make and take. You can feel good eating this dessert because of all the fruits that are on top. Perfect for any day during the summer, after a visit to the Farmers Market.

Easy Fruit Pizza

Best Ever Fruit Pizza Dessert

Cook Time 15 minutes

Ingredients

  • 1 roll refrigerated sugar cookie dough
  • 1 pkg 8 oz cream cheese
  • 1/3 cup sugar
  • 1-1/2 tsp vanilla extract
  • 1 pint raspberry
  • 1 pint blackberry
  • 1/2 pint blueberry
  • 1 pint strawberry sliced

Instructions

  • Preheat oven to 350.
  • Line baking tray with parchment paper.
  • Roll sugar cookie dough to 1/4 inch thick.
  • Bake approx 12 minutes.
  • Cool completely.
  • In an electric mixer, combine cream cheese, sugar and vanilla until smooth.
  • Spread on prepared cookie crust.
  • Top with fruit.
  • Refrigerate.
  • May be made a day ahead of time.

I love making this fruit pizza because I know my kids will eat it too and while there is sugar and the crust is a cookie- they are getting some fruit as well. I use a pizza cutter to make triangle shapes for everyone to enjoy. The fruit will sweat a little bit so if you make this ahead of time I keep the cookie and icing ready to go in the refrigerator and then before we leave or serve I add the fruit to the top.

You can substitute whatever fruits you like: kiwi, cherries, peaches and more.
