Summer is still in full swing here in upstate New York. Cooking out on our grill is a favorite past time during these hot summer months. We recently found these new MorningStar Farms® Veggie Lovers Burgers at Walmart this week and I knew that I had to pair with fresh from the garden tomatoes, basil and mozzarella cheese.

Our garden this year has been overflowing with tasty vegetables and there is nothing better than a fresh picked garden tomato. My favorite way to eat these tomatoes is with mozzarella and basil – Caprese style.

Caprese Salad Veggie Lovers Burgers
Ingredients
1 MorningStar Farms® Veggie Lovers Burgers, grilled
1 sandwich bun
1 thick slice of mozzarella cheese
1 slice of tomato
2 basil leaves
Salt and pepper to taste
Directions
Grill the Veggie Lovers Burgers according to package directions.
Place on bun.
Top with mozzarella, tomato and basil.
Add salt and pepper to taste.
I love eating vegetables fresh from the garden throughout the summer. This is a delicious meal every day of the week but would be the perfect pick for Meatless Monday!
