Cherry Almond Cream Cheese Pound Cake
Moist Cherry Almond Cake
An easy to make almond cherry cake perfect for breakfast or an afternoon cup of coffee.
Ingredients
- * For the cake-
- * 2 cups flour
- * 1 cup sugar
- * 2 tsp baking powder
- * 1 tsp salt
- 1 tsp cinnamon
- * 1 stick unsalted butter, melted and cooled
- * 2 eggs
- * 1 TBSP vanilla extract
- * 1 tsp almond extract
- * ½ cup milk
- * 2 cups fresh cherries
- * For the icing-
- * 1/4 cup powdered sugar
- * 1 tsp almond extract
- * 3 TBSP milk
Instructions
Make the cake
- Preheat oven to 375. Spray a 9-inch loaf pan with non-stick spray.
- In a large bowl, whisk together all the ingredients for the
cake except the cherries. - Once fully combined, fold in the cherries.
- Spread the batter into the pan.
- Bake for 45-55 minutes.
Make the icing-
Mix the ingredients for the icing and pour over the cake.
- Allow to harden before serving.

My husband really enjoys this fresh cherry almond cake and I think it is because it’s so moist. I sprinkled mine with powdered sugar but you can easily make a glaze or a frosting if you want but I think it is sweet enough on its own.
