The fall weather has fully encompassed the Northeast and I am enjoying every minute of sweater weather, mums and of course hearty soups to starve off the cold temps. This kielbasa and bean soup is one of my favorites and so easy too.
Hearty Kielbasa and Bean Soup
I like to put this soup on in the morning before I get anything else going. This way the soup can simmer away all day if needed on a very low heat. Plus it makes the house smell homey and delicious. This recipe all works perfectly in the slow cooker. Simply increase the amount of chicken stock to 8 cups and put your slow cooker on low for the day too!
I find that if you soak the beans in water overnight, it does not take as long to cook!
Mixed Bean Soup
Ingredients
4 cups chicken stock
1 pkg mixed dried beans (soaked overnight)
2 bay leaves
2 lbs kielbasa, cubed
2 carrots, chopped
2 stalks celery, chopped
1 onion, chopped
1 tsp Adobo seasoning
salt and pepper to taste
Directions
In a medium pot brown the kielbasa.
Remove the kielbasa and add the onions, carrots and celery to the same pot and saute until soft.
Add the beans, stock, and meat back to the pot and simmer. Season.
Simmer for 60 minutes or until the beans are soft. You may need to add more chicken stock if your beans absorb the liquid, so keep an eye on this.
Having soup on hand for lunch time meals is important in my home. I always get a great source of nutrition for the soups that we have and I can feel good about eating these at lunch or at anytime really.
