The crispy rice cereal in the batter is amazing. These monster cookies will quickly become a favorite with your family and friends. Now if you have some candy pieces that you want to add, go ahead!

Monster Cookie Recipe

Ingredients
3 cups flour
1 TBSP baking powder
1TBSP baking soda
1 TBSP cinnamon
1 tsp salt
1-1/2 cups brown sugar
1-1/2 cup sugar
2 TBSP vanilla extract
1-1/2 cup unsalted butter, room temp.
3 eggs
2 cups oats
2 cups crispy rice cereal
2 cups shredded coconut
1-1/2 cups chocolate chips
½ cup white chocolate chips

Directions
Preheat oven to 350.
Line baking sheets with silicon mats, set aside.
In a mixing bowl fitted with the paddle attachment cream the butter and both sugars until pale and fluffy. (about 5 minutes)
Add the vanilla and eggs until combined.
Add the flour, baking powder, baking soda, cinnamon, and salt until combined.
Remove from mixer.
Fold in cereal, oats, coconut and chips.
Refrigerate for at least 2 hours.
Drop spoonfuls of dough onto prepared cookie sheets and bake for 10-12 minutes.
These cookies are soft and chewy with a crispy outside. The crispy rice cereal in the batter gives a delicious crunchy texture to these cookies. Absolutely delicious.
