Despicable Me Minions Cookies

These Minion sugar cookies are the perfect dessert for a cute Despicable Me birthday party. These are probably the cutest things besides those adorable Minions!

 

Minion Cookies

Easily make these cupcakes by using a box mix and then using fondant to shape your Minions. Kevin, Stuart and Bob are the popular Minion names and we could not help to make these cute cookies.

How to Make Minion Cookies

Ingredients

½ stick butter, softened

½ cup granulated sugar

1 egg

½ tsp vanilla extract

1 cup all-purpose flour, plus extra for rolling.

1 tsp baking powder

½ teaspoon salt

3 tsp yellow gel food coloring

1 cup blue candy melts

1 tsp coconut oil

Candy eyes

White decorating frosting

Black decorating frosting

Yields: Approx. 12-15 cookies, depending on your cookie cutter size.

Directions

With a mixer, beat butter, sugar and egg. Once mixed, sift flour, baking, soda, and salt into the mix and beat more. Add yellow food coloring and allow for the cookie batter to be completely tinted.

Wrap in plastic and set in the fridge for at least half an hour. Once refrigerated, let sit for five minutes before rolling.

 

Preheat your oven to 350 degrees and line a cookie sheet with parchment paper.

On a floured working surface, roll dough so that it’s about ¼ of an inch thick. Using a cookie cutter, cut out circles and gently placed on your lined cookie sheet, about an inch apart from one another.

 

Bake 12 to 14 minutes and allow to cool on rack before decorating.

 

Put candy and coconut oil in a microwave-safe bowl and microwave in 30-second intervals until completely melted. Line a cookie sheet with wax paper.

Dip half of your sugar cookie in melted candy and gently place on lined cookie sheet. Use white frosting to glue on your candy eyes (some will have 2 eyes, others will have 1).

Frost “goggles” around your minions with your white decorating frosting.

With the black decorating frosting, draw hair on some of your Minions. Allow for the candy melts to set and enjoy!
