Banana Bread is a long standing family tradition. There are so many times that I want to make a banana bread but each time I tried to create something without butter it came out much to dry for my liking.
Banana Bread – Gluten Free
We always have bananas that get to brown for the kids to eat so I can probably make a banana bread every week if I wanted to.
If you want to make this gluten free banana bread omit the chocolate chips. This bread is super moist and delicious. I love the texture and flavor that the honey gives this bread too.
Moist Gluten Free Banana Bread
Ingredients
2 eggs
½ cup coconut oil, melted
1/3 cup honey
¼ cup almond milk
1 TBSP vanilla extract
1 cup mashed ripe bananas
1 ¾ gluten free flour
1-1/2 tsp cinnamon
1 teaspoon baking soda
1 teaspoon salt
½ cup semi sweet chocolate chips (optional)
Directions
Preheat oven to 325.
Spray 1 loaf pan with cooking spray, set aside.
In a bowl, combine flour, cinnamon, baking soda and salt.
In a separate large bowl beat the eggs, oil, honey, milk and vanilla until light and combined. Stir in the bananas, flour mixture and chocolate chips (if desired)
Pour batter into a pan, bake for approximately 1 hour.
Cool for at least 10 minutes before removing from pan.
This recipe is so easy to make and you probably have most of the ingredients in your home already. This is a really moist recipe and even your little one will enjoy this recipe. I call this breakfast cake and they eat it up. They also like zucchini bread too.
Again we call it breakfast cake because honestly what child could resist eating cake for breakfast? I know I would love a little cake for breakfast- it usually makes for a great start to the day!
