Easy and Moist Pumpkin Bread
However, I love pumpkin bread. There is something about the rich moist spice bread that is comforting to me. This recipe makes two loaves with each loaf yielding 8 slices. If you are following a Weight Watchers (WW) meal plan, each slice is 5 points.
Moist Pumpkin Bread Recipe
INGREDIENTS
1 can (15 ounces) pumpkin
2 TBSP maple syrup
¼ cup honey
1/3 cup applesauce
½ cup Greek yogurt
1/2 cup brown sugar
1/3 cup vegetable oil
2 teaspoons vanilla
3 eggs
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoon ground cinnamon
½ teaspoon baking powder
½ teaspoon ginger
DIRECTIONS
Preheat oven to 350ºF.
Grease two 9” loaf pans
Combine all the ingredients and stir well.
Pour into the prepared pans.
Bake for 60 minutes or until toothpick inserted in center comes out clean.
Cool for at least 10 minutes before turning out of pan.
This recipe has a lot of ingredients but I assure you, its worth every last one of them. This pumpkin bread is always moist and delicious and we go through quite a few loaves during the fall season.
