Pumpkin Cookies- Cake-Like Consistency Recipe
I used canned pumpkin in this recipe but you can easily make your own pumpkin puree if you would like to. These pumpkin cookies are perfect with an afternoon cup of coffee. For a twist on the recipe add chocolate chips to the batter before baking or sprinkle with powdered sugar.

Pumpkin Cookies - cake like
- 1 Box Spice Cake Mix
- 1/2 cup Pumpkin Puree
- 1 egg
- 1/4 cup water
- Preheat oven to 350 and grease 2 cookie sheets.
- Mix all ingredients in a bowl.
- Drop by tablespoons onto prepared cookie sheets.
- Bake for 10 minutes.
- Cool and enjoy- you can ice them with a cream cheese frosting if you like, but they are delicious on there own.
