Easy Pumpkin Cookies with Cream Cheese Frosting
Fall is in full swing here in Upstate New York so give me all the pumpkin! These pumpkin cookies are soft and delicious and packed full of pumpkin and cinnamon!
Add the cream cheese frosting for a real sweet treat or keep the fluffy cookies plain for a breakfast treat. Be sure to cool the cookies completely prior to icing. Once iced, store in the refrigerator.
You can freeze these pumpkin cookies prior to icing the cookies.
Ingredients Pumpkin Cookies with Cream Cheese Frosting
- flour
- baking powder
- baking soda
- cinnamon
- nutmeg
- salt
- butter
- sugar
- brown sugar
- pumpkin puree
- egg
- vanilla extract
Pumpkin Cookies with Cream Cheese Frosting
Ingredients
1-1/2 cups flour
1 tsp baking powder
1 tsp baking soda
2 TBSP cinnamon
¼ tsp nutmeg
1 tsp salt
1 stick butter, softened
1 cup sugar
½ cup brown sugar
1 15 oz can pumpkin puree
1 egg
2 tsp vanilla extract
Directions
Preheat oven to 350. Line 3 baking sheets with silicon mats.
In an electric mixer with the paddle attachment cream the butter and sugars together. Add in the pumpkin, egg and vanilla extract and combine.
Add the dry ingredients and mix together.
Scoop out onto the prepared baking sheets.
Bake for 20 minutes and cool completely.
*** Frost with cream cheese frosting if desired. (8 oz cream cheese, 3 TBSP butter, 2 cups powdered sugar and 1 tsp vanilla extract.)
