Tropical Pina Colada Cupcakes

These Tropical Cupcakes are just like a warm day on the beach. A light and fluffy cupcake with hints of pineapple and coconut.

Pina Colada is one of my favorite cocktails during vacation and this cupcake is perfect for a beach themed party or just a summer gathering.

Tropical Cupcakes

Ingredients

Cupcakes-

3 cups flour

1 cup sugar

2 tsp baking powder

2 tsp baking soda

1 tsp salt

1-1/2 sticks unsalted butter, room temperature

3 eggs

¾ cup pineapple puree

¼ can coconut milk

1 tsp vanilla extract

Food coloring (optional)

Icing

8 oz cream cheese, softened

3 cups powdered sugar

1-1/2 sticks unsalted butter

¼ cup pineapple puree

Preheat oven to 350 and line 24 cupcake pans with liners. Set aside.

To make the cupcakes-

In an electric mixer with the paddle attachment, cream the butter and sugar together until light and fluffy Add the remainder of the ingredients until just combined.

Pour into prepared cupcake pans and bake for 15-18 minutes.

Cool completely

Prepare the frosting and pipe onto each cupcake.

Garnish with a pineapple and a cherry.

Be sure to wait until serving to garnish the cupcakes or else you might have a bit of a mess. I have found that draining the cherries on a paper towel and it will cut down on a bit with the juices.

These cupcakes would be great for all different party themes: luau, beach, Lilo and Stitch, Little Mermaid and mermaid parties just to name a few. They would also be a great addition for a pool party too.
