Monkey Bread with Pineapple and Coconut
Tropical Monkey Bread
Pina Colada Monkey Bread is a sweet treat you can make with the kids that is fun to bake and delicious to eat. Filled with the tastes of a yummy pina colada, this dessert is sure to have you coming back for more.
We used Kings Hawaiian Sweet Bread in this recipe and boy is it good. You could also use a roll of refrigerated biscuits if you would prefer.
What is Monkey Bread?
Monkey Bread is a sweet pastry that is made with small pieces of dough that can be pulled apart and eaten with your fingers. It can be served for breakfast, brunch or for dessert.
Pina Colada Monkey Bread
Ingredients
1/2 loaf Kings Hawaiian Sweet Sliced Bread
1 16 oz can crushed pineapple
1/2 cup butter
4 eggs
1 cup sugar
1 tsp vanilla extract
1/4 cup coconut flakes
Prep time: 5 minutes
Cook time: 1 hr
Serves 6
Directions
Preheat oven to 350*
Cut bread into bite sized pieces
In a bowl, cream together sugar and butter
Add eggs to the bowl and beat
Add crushed pineapple and vanilla and mix well
Evenly spread bread pieces into a 9” bundt pan
Sprinkle coconut flakes over bread
Pour contents of the mixing bowl over the bread
Place in the oven for 1 hour
Enjoy warm or cold with a dollop of whipped cream
