Apple Zucchini Cake
The perfect combination of apples and zucchinis combined into one flavorful quick bread. This cake has all the fall feels and is perfect for breakfast or an afternoon treat with coffee.

Apple Zucchini Bread
Ingredients
4 cups flour
1 TBSP baking soda
2 tsp cinnamon
1 tsp nutmeg
1 tsp salt
5 large eggs
1-1/2 cups oil
2 cups sugar
1 cup brown sugar
2 TBSP vanilla extract
1 cup shredded peeled apples
2 cups unpeeled zucchini shredded
Yield- 3 loaves, 9”x4” pans, 16 slices each
Directions
Preheat oven to 350.
Spray 3 loaf pans with non-stick spray, set aside.
In a large bowl combine all the ingredients, folding in the zucchini and apples last.
Once combined pour into prepared pans. (about 2/3 full)
Bake for 50-55 minutes or until a toothpick comes out clean.
Cool in pans for at least 10 minutes before transferring to a wire rack.
This is such an easy recipe to make and I am not sure why I did not think of combining these two fall staples sooner!
