Mickey Mouse Cupcakes
This recipe is a homemade funfetti recipe and is perfection. The kids (and adults) will be begging for more. Plus, they are super easy and always come out perfect. Do not over bake these cupcakes, as they will firm up as they sit.
Ultimate No-Fail Vanilla Cupcakes with Sprinkles Recipe Funfetti
24 cupcakes
Ingredients
1 stick unsalted butter, room temperature
1 cup sugar
½ cup oil
1 tsp salt
1 TBSP vanilla extract
2 tsp baking powder
1/2 tsp baking soda
½ cup milk
3 eggs
2-1/2 cup flour
½ cup sprinkles
Directions
Preheat oven to 350. Line muffin tins with liners and set aside.
Cream the butter and sugar together in the bowl of an electric mixer with the paddle attachment. Add in the oil. Blend together for about 5 minutes.
Add the salt, baking powder, baking soda and extract and mix well.
Add in the flour and milk and mix well.
Fold in the sprinkles.
Fill each cupcake liner about 2/3 full.
Bake for 20 minutes.
Cool completely.
We used 2 mini chocolate sandwich cookies to make our mouse ears and these beautiful rose gold sprinkles (affiliate link). We make these cupcakes all the time and they are perfect for any party.
